This recipe can be served for dinner or an appetizer. All you have to do it throw the ingredients together and you’re done!

These ingredients are inexpensive and easy to find in any grocery store. If you’ve never made quinoa before, don’t worry; it’s the easiest thing in the world. It’s also very healthy!

First, preheat oven to 350 degrees. Add all ingredients to a large bowl and mix to combine.  (See, isn’t that easy?)

Liberally spray your muffin tin with non-stick spray and spoon mixture to the top of each cup. Bake for 15-20 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing from tin. Do not under bake or they won’t come out of the pan.

 

Ingredients:

  • 2 cups cooked quinoa (about ¾ cup uncooked)
  • 4 eggs
  • 1 cup shredded zucchini
  • 1 cup shredded cheddar cheese
  • 1 cup chopped mushrooms
  • ¼ cup chopped parsley
  • 2 tbsp grated parmesan cheese
  • 2 green onions, sliced
  • salt and pepper to taste
