I don't remember where I found this recipe but I've made it a bunch of times. It's a good side dish for breakfast when you have a lot of guests or, my favorite, with my Christmas ham.

This is an old American classic potato dish named because it is commonly found on the menu of roadside cafes in the Midwest.

Roadside Potatoes

For 4 servings you will need:
  • 1 package (16 oz) frozen hash browned potatoes
  • 1/4 cup (1/2 stick) butter melted
  • 1 small onion, minced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • salt and pepper
  • 1/3 cup half-and-half
  • 3 Tbsp firm butter
  • Chopped fresh parsely, for garnish, optional
Preperation:

In a large bowl, combine the potatoes, melted butter, onion and cheeses.

Turn into a well-buttered 9 inch baking dish. Sprinkle with salt and pepper. (I double my recipe so I use a 9 x 13 baking dish.)  Add half-and-half  and dot with butter.

Bake at 350° for 1 hour or until the potatoes are slightly crusty on the edges and lightly browned. Sprinkle with fresh parsley, if desired. Serve immediately.

I also sprinkle a little extra cheddar cheese on top before baking.
